Color manufacturers are helping food, beverage processors develop the next generation of clean label products.

An accomplished food and grain science expert, Dr. Cai joined MGP in the role of applications scientist in 2013.  He previously had served as a post-doctoral research associate in cereal chemistry at Washington State University in Pullman, Wash.

Consumers are demanding more from their dairy product favorites—as in more clean labels, value-added ingredients, portability and sugar reduction.

Kerry surveyed more than 700 consumers to understand their opinions on nutrition, ingredients and sustainability and how these factors influence their opinions of clean label. The consumers were behaviorally segmented into five specific groups, each with a unique outlook on clean label. The report details the five segments and their respective demographics, adoption stage, relationship with clean label, their ingredient focus and avoidance patterns.

Officials note that the project involved the complete renovation of a century-old mercantile building. Coincidentally, the original store was built by Clemens Uptmor III, the son of one of the partners in “Hope Roller Mills, Uptmor & Siemer, Prop.,” which later became Siemer Milling Company.
