AAK showcased its latest non-hydro bakery solutions during the 2016 International Baking Industry Exposition in Las Vegas.

“As our industry continues to transition to the regulated removal of partially hydrogenated oils from the food formulators’ toolbox, baking and snack providers are in need of fat and oil solutions to overcome functionality challenges,” says Terry Thomas, president, AAK USA Inc. “Our live baking demos at IBIE showcased how AAK’s solutions allow processors to deliver a ‘no compromise’ experience to consumers while meeting real-world bakery application challenges at the same time. The demos also highlighted our effective customer co-development process, where we work side-by-side with our customers to develop unique solutions to meet their challenges.”

All IBIE prototypes featured AAK’s brand of multi-functional fats that are non-hydrogenated and zero trans, including:

• Savory flatbread – features Cisao®, AAK’s brand of multi-functional palm based bakery fats. Cisao 7831, a non-hydrogenated, no-trans flaked shortening, offers improved flakiness of baked products without the traditional roll-in process, and even distribution to provide softer crumb structure and maintain fresh flavor.

• Cinnamon Danish – features a blend of Cisao®, AAK's non-hydro, no trans bakery fats. Cisao 8253, a flaked shortening with ground cinnamon, provides an even distribution of fat and a light flaky texture while also showcasing cinnamon spice particulates, all without the roll-in process. Cisao 8285, an all-purpose margarine, is a roll-in fat that provides emulsification, color, and a smooth plasticity and consistency that spreads perfectly throughout the lamination process. Cisao 8315 gives the cinnamon filling excellent spreadability and Cisao 8120, AAK’s most versatile shortening, is easily incorporated and provides a creamy mouthfeel.
