Kathy Saldana is research & development manager at Custom Food Solutions, a Louisville, Ky., processor of soups, sauces, side dishes, sous vide products, desserts and other items for foodservice, retail and co-pack customers. She holds a master’s in Meat Science (Iowa State) and has nearly 30 years of food industry experience with meats, pizza, baby foods and other prepared foods.
