As consumers show increasing concern over synthetic antioxidants in cereals, Kalsec® rosemary extract offers a cleaner label alternative.

In a series of tests on extruded cereal, Kalsec® Herbalox® XT rosemary extract provided a 79% reduction in the formation of hexanal, a typical marker for oxidation in foods during ambient storage conditions. The reduction in the development of off-flavors, such as rancid, cardboard-like flavor notes, significantly improved the shelf life of the tested cereal.

Natural antioxidants have historically contributed undesirable flavors to food products while providing oxidative stability. Kalsec® has developed a full range of natural oxidation management solutions to improve stability without compromising taste in flavor-sensitive applications.

“Our customers continue to look for cleaner label solutions for their products, without sacrificing quality or performance,” says Jill McKeague, product director, antioxidants.
