As consumers become increasingly mindful of their health and well-being, the food and beverage industry is witnessing a shift towards products that offer both indulgence and functionality. 

In 2025, we can expect to see a convergence of several key trends that prioritize holistic health and personalized experiences. From liver health-focused products to sugar-inspired flavors without the added sugar, the industry is responding to the growing demand for healthier options that don't compromise on taste. Additionally, the resurgence of lemonade and limeade—alongside the incorporation of fiber into beverages—reflects a focus on natural, refreshing, and nutrient-dense options.

Here are four trends driving new product development.

Look out for your Liver: As consumers become increasingly aware of the impact of their diets on overall health, liver health is poised to emerge as a significant trend in the food and beverage industry. With rising rates of non-alcoholic fatty liver disease (NAFLD) and other liver ailments, there will be a growing demand for products that support liver function. This trend will likely manifest in the development of functional beverages, fortified foods, and dietary supplements specifically designed to protect and enhance liver health. Additionally, we can expect to see a shift towards ingredients known for their liver-protective properties, such as antioxidants, anti-inflammatory compounds, and probiotics.

Some brands already jumping on this trend include: 

• Kin Euphorics Luna Morada featuring a mosaic of active ingredients including purple maize, wormwood (this is called out specifically for liver health), milk thistle, zinc, and clove.

• doTerra VMG+ Whole Food Nutrient Complex with plant-based extracts from amla, guava, lemon peel, holy basil, and moringa.

• Pour Decisions from Life Happens reads “alcohol metabolism” across the jar. These capsules contain milk thistle, rosemary, and schisandra.

• Biocol Labs sells Liver Health Kits with detox ampoules (to be added to water) that claim to support liver function. Some key ingredients are artichoke, rosemary, zinc, fennel, dandelion, and bromelain.

Sugar as a Flavor: Sugar reduction will remain a prominent trend in the food and beverage industry, though in 2025 (and beyond), we can expect to see a surge in products that use sugar as flavor inspiration—while they maintain low or no sugar content. This shift will allow manufacturers to offer consumers indulgent tastes without the associated health concerns. 

Things that are inherently sweet—including cotton candy, maple, caramel (cajeta, dulce de leche), honey, and molasses—are just a few examples of flavors that can be used to create satisfying treats with reduced sugar content. Additionally, given the current challenges in the cocoa market (failed crop, surging prices), there may be less room for new chocolate SKUs. This could lead to a focus on sugar-inspired flavors in products that may have initially planned on chocolate. 

Here are brands that leveraged sugar-inspired flavors in 2024.

• Nestlé introduced its first U.S. RTD coffee with honey (in this case it appears to be for added sweetness, but still helps bring honey to the forefront).

• Liquid IV Hydration Multiplier in Cotton Candy.

• Speri’s Plant-powered Meal Replacement in Vanilla Maple.

• Empowered Cookie Low-Carb, Diabetic-friendly soft-baked cookies in Pumpkin Chai Ginger Molasses.

Fiber-friendly: Fiber will continue to gain momentum as a major trend in the food and beverage industry in 2025. With a growing understanding of the importance of fiber for digestive health, gut health, and overall well-being, there will be a surge in products fortified with fiber. This trend will likely manifest in the development of fiber-rich beverages, such as fiber-infused protein drinks, juices, carbonated soft drinks, teas, and plant-based milks. Additionally, we can expect to see a rise in functional beverages that combine fiber with other beneficial nutrients, such as probiotics, electrolytes, or antioxidants. Consumers want to be fuller longer (and those prescribed semaglutides may already be experiencing that sensation), so fiber-rich products satisfy a critical need. 

Here are some fiber-forward products from 2024: 

• Olipop (Ridge Rush, Barbie Collab Peaches & Cream) touts 9g of fiber in its heritage products.

• BelliWelly Daily Fiber + Probiotics supplement in Peach Mango.

• Pressed Juicery Protein Smoothies with 8g of fiber (and 20g-30g of protein).

• Mighty Soda by beliv boasts pre, pro, and postbiotics and 3g of fiber.

Lemonade Era (but make it Lime sometimes): Lemonade is poised to experience a resurgence in popularity in 2025. The versatility of lemonade, combined with its nostalgic appeal, makes it a prime candidate for a beverage renaissance. We can expect to see a proliferation of lemonade-based products—ranging from classic lemonades to less conventional flavor combinations such as Blue Raspberry Lemonade, Creamy Lemonade, and Dragon fruit Lemonade. Limeade, a tangy and citrusy alternative, will also gain traction, offering a refreshing twist on the traditional lemonade. 

In 2024, on TikTok, we saw some Lemonade experimentation like Fresh Ocean Water Lemonade (Coconut Syrup, Blue Powerade, Seltzer), Mango Lemonade, Creamy Lemonade, Firecracker Lemonade, and Sour Watermelon Hard Lemonade.
