David Feder, Executive Editor-Technical for Prepared Foods, interviews Jackie Kim, product manager for Nasoya, a part of Pulmuone Foods, USA, leading providers of tofu to the American market and makers of plant-based meat, poultry, fish, and seafood products. Jackie manages Pulmone’s flagship brands Nasoya and Plantspired, carving out the short- and long-term innovation roadmap, as well as its “go-to-market” strategy for plant-based meat items. Kim has played a key role in the innovation of the new Plantspired charcoal-grilled steak analog. It’s the first of many vegetarian meat-replacer products that Nasoya and Plantspired are in the process of launching. As a company with Korean roots, Nasoya draws on a centuries-old tradition of crafting meat substitutes and analogs from plant-derived proteins.
