Fast-food patrons in New York City are eating far less unhealthy fat since restrictions on its use by restaurants were imposed four years ago, a report sponsored by the city said.
When 61 healthy women followed a diet with a hefty dose of natural trans fats for four weeks, researchers found there were no changes in the women's LDL (bad) cholesterol and only small changes in HDL (good) cholesterol, in some women.
Concerns about weight management and reduction have not prompted a slew of low- or reduced-fat products in recent years—in fact, just the opposite. Fats and oils play key roles in food formulation and have certain characteristics which must be taken into account when developing new products or reformulating existing ones.
